Cut flowers last longer as water and other essential minerals can easily enter the phloem. Capillary action is faster and thus, the flower stays fresh.

The Newtons and friends were taking tea
Beneath the boughs of an apple tree,
When a falling fruit landed on the
Head of the head of the family.
Mrs. Newton cried, 'Well deary me!
That could've caused an injury'.
But clever Isaac alone could see,
The situation's true gravity.

Default The stem

Also, the way you cut the stem of the flower has an effect as well. If you cut the stem at an angle, then the water flow and capilary action is faster through the flower.
