Default This has seriously egged me out!!!

Ok, this is really confusing me. Now, you all agree that a liquid on gaining energy changes to a gas. This has been proven and is a fact.

My Question - On boiling an egg, the liquid inside accepts heat energy and according to the above theory, it should turn to gas, but it becomes solid. How? Why?
