Default vegan marshmallow

Hi there,
My name is Eddie from Vancouver, I need help. I trying to make vegan marshmallow and having a hard time to find vegetarian gelatin would like to know if any food scientists out there can help me. I had tried agar agar but it was not fluffy, I need a formula for vegetarian gelatin, or a recipe with gum arabic or gum guar or something.

Default Vegan Gelatin

I had considered them but not sure if they are 100% vegan because some of the major brands are not passed the test. So I am trying to find a way to work around it.

It would be easier for me to help you if you would explain your hypothesis or a simple description of your science project.

I don't know that mine is a science project, but i want to create some healthy desserts that are low carb, low fat, no cholestero , with alot of nutrition. Not thing new but the challenge is the taste,moulth feeling, and texture( the second and the third day) that have to be as close to the traditional desserts or better. These products will be evaluate by the Canadian Heart and Stroke Foundation. I choose the vegan because there is no egg and dairy free. let me know what do you think.

i find it very strange - vegerarians accuse non-veggies of killing and eating ( ) but don't they realize that they too kill plants to eat them... ( )

well I have a cousin that is a vegetarian because of well diet it is not at all healthy... well to tell you the truth sciencefreak don't really have a brain/ feeling unlike animals...

e.g. ok what about if you were going to be killed for food won't you be freaked? I certainly would...

that is why some vegertarians would disagree in killing animals but I still eat meat anyway it is a 'circle of life' also what about the other animals that are carnival themsleves?
