Default Projecting height from shoe sizes

Interesting project. Perhaps you could gather a sample of volunteers and plot a graph of shoe size vs height.

However, I would recommend that maintain several constants - such as race, sex etc. Males would have different shoe sizes compared to females, even if they are of the same age. The same goes with people from different races.

Default Strange shoes

I must agree that heredity has alot to do with it. One of my close relatives has the same shoe size as me. But hieght aslo can conbribute to that. but I would go with Mads idea to gather a sample group of people and test them.
