Well I'm actually doing a science project on that now And I fond your question and thought I'd help you out. We don't know each other.
Baking powder and baking soda are oxidents. in other words, they produce gasses. when you forgot to add the baking powder (or was it soda?) to your mix, you were leavin out the thing that makes all the bubbles. it's symallar to yeast. the bubbles make everything rise. without bubble you have a pumpkin flavored pancake. And since it was denser the color probobly got darker.
