Most flavors are a result from a combination of taste bud and olfactory receptor stimulation. When you hold your nose, certain odor causing chemicals will not reach your olfactory receptors (located in a small area of tissue in the upper part of the nasal cavity). Taste and smell sort of work hand in hand.

The same thing happens when you are congested. Everything kinda tastes the same, but you can still tell if it cold/hot and its texture.
